Fattoush
This
is my own recipe, maybe it is a little bit different from the original recipe
that I learned of my mother. In Palestine and Lebanon are people used eating
this salad in summer. In Palestine it’s a little bit different from Lebanon.
But today I’m going to mix the two recipes and I’m going to add my own touch in
this fresh and yummy salad.
Recipe type: salad
Preparing time: 20 minutes
Serves: 4 persons
Ingredients:
Salad ingredients:
2 pita bread toasted with 1 tsp. sumac and 1 tbsp. olive oil
until golden brown, broken into pieces.
3 chopped tomatoes into chunks
½ cucumber, chopped into chunks
½ onion( or one little onion), chopped into chunks
1 carrot, finely chopped in to chunks
¼ small head of iceberg salad
2 cucumber pickles, chopped into chunks
For the dressing:
Juice of ½ lemon
2 tbsp. apple cider vinegar
2 tbsp. olive oil
½ cup tahini
½ tsp. tabasco sauce
1 tsp. sweet mustard
1 tsp. pomegranate molasses
1 tsp. salt
Instructions:

Mix all the chopped salad ingredients
in a mixing bowl except the toasted bread.

Make up the dressing, then
add it to the salad mix.
·
Combine the toasted bread to
the salad and prepare it for severing in one large bowl or in small bowls.
·
Finally decorate serving
bowls with arugula(rocket salad), tahini and finally with some black olives.
