Ma'amoul(arabic: معمول بالكيري)

Ma’amoul, Eid cookies or date stuffed cookies are the same pastry. It’s one of the most pastries that Arabs eat in Eid. There is many recipes for ma’amoul..some of these recipes are difficult or take long time to bake. But today I came with an easy recipe. It’s a little strange recipe but it tastes really fantastic and it just takes about an hour to bake. Let us bake ma’moul together and to have our own Eid with this simple recipe.





Recipe type: Pastry- dessert
Preparing time: 20-30 minutes
Baking time: 15 minutes
Total time: 45 minutes
Makes: 28-30 pcs



Ingredients:
  2 ¼ cup all-purpose flour
 ¾ cup powdered sugar
1tsp. mahlab
120 g kiri cheese
200g butter in rooms temperature
Filling’s ingredients:
100g almond (coarsely ground)
100g hazelnut (coarsely ground)
150g lukum (Turkish delight)
½ tsp. cardamom

Instructions:
  • Start with preparing the filling. Put the lukum in a small pot over low heat until it melts. Then add almond,  hazelnuts and cardamom and keep mixing until you have consistent mixture. Set aside and let it cool. 
  • Preheat oven to 180 degrees.
  • In a large bowl, combine sugar, butter and cheese. Mix well using your hands until the mixture is well incorporated.
  • Add the flour and keep working with your hands until it forms a smooth dough.
  •  Work with about a tablespoon of dough at a time, for 28-30 balls. Using your thumb press a hole in the center of each ball. Place about 1 teaspoon filling in the hole, close it up, and roll it into a ball again.
  • Press each filled ball gently into the maamul mold and bang it against the counter to release it.
  • Arrange the cookies into the lined baking sheet and bake them at the lower layer of oven at 180 degrees for 10 minutes and another 5 minutes in the upper layer of the oven, until golden.
  • Once cooled, sprinkle with powdered sugar and serve it with coffee.
